Chicken and Rice




This is another really easy one!

I am not a huge fan of the "cream of" soups... Don't get me wrong, they are great for when you need them... But have you seen, and I mean REALLY seen how they come out of a can? That really can't be good for you, can it? But of course, they are my go to when I am making a casserole or something. SO I guess I can't say too much, because I really do use them alot! ;) sigh, oh well.. but atleast this time I made something healthy! :) And I didn't use the cream of soups, not just because I don't have a working can opener, (yes, my hand held can opened bit the dust, I am so depressed! Now I need to go buy another one....) but because I wanted to try something different! ;)

There is a bit of prep work involved though, but as long as you REMEMBER to turn your rice cooker on, it's all good! ;) I've forgotten that MINOR detail, alot!!! You would think by now I would remember to hit that button that says cook, but yeah, anyways....


Saute mushrooms and onions


(sorry about the lighting here on these pics... my fan light above my stove is dead, and when you turn the flash on the camera, it's too bright! I just can't win here!!!)
Here are the sauteed mushrooms and onions in a bowl


Now cook your chicken with your minced garlic


Add some sour cream (it's about a cup)


Now the cheese! You can use whatever kind you would like, I use cheddar and mozzarella, because I didn't have enough cheddar.


Then add the rice and cooked chicken and mix it all up...


My bowl wasn't big enough to mix everything, so I just dumped it all in my casserole dish and mixed it all up ;)


Here it is before cooking, and in all honesty, it doesn't look much different coming out of the oven! ;)


Here it is ready to be eaten! nice and warm and sooo good! :)



Chicken and Rice


1 Tbsp coconut oil
1 Small Onion, diced
1 8oz package Mushrooms, sliced
1 Tsp salt
4 cloves of garlic, minced
1 Lb Chicken Breasts (about 2), boneless, skinless, cut into 1/2 inch pieces
1 cup sour cream
1 1/2 Cups Cheddar Cheese, shredded (plus additional for sprinkling on top)
3 Cups Cooked Rice

1. Preheat oven to 350 F.
2. Place 1 tbsp of coconut oil in a large saute pan over medium heat and cook the onions for 2 minutes.
3. Add the mushrooms, season with 1/2 tsp of salt and cook another 4 minutes or until the mushrooms are tender and the onions are translucent.
4. Remove the mushroom mixture and place in a bowl.
5. Heat 1 tsp of oil in the sauté pan and cook the chicken, minced garlic and remaining 1/2 tsp of salt for 3 minutes or until cooked through.
6. Combine all the ingredients together, place in an 9 x 13 inch baking dish and sprinkle with additional shredded cheese.
7. Bake for 20 minutes.
8. Serve.

*This is sooo easy! Like I said, as long as you remember to turn your rice cooker on! :)
You could also use wild rice for this... I use jasmine rice for pretty much anything, it's sooo good! Not as healthy as brown or wild, but it's good! ;)
You don't have to add all the mushroom either, but the sour cream and mushrooms act like the cream of mushroom soup, just a healthy version. ;)
You also don't need to add all 4 cloves of garlic, but it wasn't too strong! We LOVE garlic! ;)
Also, if you are looking for dairy free, just get the dairy free sour cream and cheese.

Chicken/Turkey Avocado Wraps





These are SUPER delish and SUPER easy! I don't know about you, but we STILL have left over turkey! I will be putting some in the freezer for a later. It's GREAT to have on hand in your freezer, so you can just add some to your casserole, or have turkey tacos, this recipe! :)

This recipe made 7 (SMALL) tortillas. The kids each ate 2, except for the little one, he had a 3/4 and I ate the other 1/4... Yep, that's all I got, 1/4 of this super delish wrap! Sigh, oh well...

My kids LOVE pretty much ANYTHING that is in a taco! I don't know what it is about the tortillas that they love so much... I have a recipe to make gluten free/wheat free tortillas and want to try those and have them on hand for the next time I make these! which will probably be later this week or next, and I'll be making MORE so I am sure to have some for me!

I served this for a really quick supper for my kids, but would be great for lunches as well. I served this with some fruit and veggies. Carrots, cucumbers, apples and a clementine. :)

Right about 2 cups cut up, diced, or shredded cooked chicken or turkey


I sliced up 2 small baby dill pickles


2 HEAPING tablespoons (I used a soup spoon) of mayo, or miracle whip, whatever is your fav


1 avocado mashed (getting ready to dump it in the chicken/turkey mixture) You can either mash it really fine, or keep it lumpy.. You can even just dice it, whatever you like!
I also added a bit of lemon juice to my avocado


Combine all ingredients in a bowl

And MIX!!!!


Put a tablespoon of the mixture on a tortilla


And roll it up!


I just cut this so you could see the middle, but you don't have too!


Chicken/Turkey Avocado Wraps

2 cups cut up, diced or shredded chicken or turkey
2 baby dills cut up, sliced
2 HEAPING tablespoons (like a soup spoon) mayo, or miracle whip
1 avocado, mashed, or diced, how ever you like it!
1 teaspoon lemon juice
tortillas

Combine, chicken or turkey, baby dills, mayo, together.
In a separate bowl mash up your avocado and lemon juice, stir to combine
Dump the avocado in with the meat mixture and stir to combine.
Place on heaping spoonful on a tortilla and roll up!
ENJOY!!!!

*It's really easy and really yummy! Something different to do with all your left over turkey, or chicken! :)

Homemade Noodles


These are so good and actually pretty easy to make! Sometimes when you hear "homemade" it makes you all paranoid and then there is this block in your brain where it won't let you think or even try to do it! But let me tell you, these really are easy! Only a few ingredients too!
Just make it in the morning and in the evening, they are ready! You could even make them the nite before and will be ready for you at supper the next day! I like to make them the nite before, but this time, it got to late, so I made them right after I got the kids their breakfast...

I love to make these with chicken, mashed potatoes, and corn. I usually cook my chicken in a big pot, then use the chicken stock to cook the noodles. When the noodles are about done, I add the cut up, or torn, chicken. Super delish!

You can also use whole wheat flour to make these. You may not need as much flour if using whole wheat.... I haven't tried to use whole wheat yet, but prob will! :)


3 eggs, slightly beaten


2 cups flour


mix it all up...


I mix it up by hand... It's better that way! ;)


Put dough on slightly floured surface...


And roll out. You can roll it as thin or thick as you like. In all honesty, I can not tell you how thick I roll mine, I just do it! :) After it's rolled, just use a butter knife and slice it. Again, it's up to you on how thick or thin you want them! :)


Lay out on a wax or foil covered pan, cookie sheet. (I ran out of waxed paper, so I had to use foil..)


Bring your chicken broth or water to a boil and place your noodles in the pan

While the noodles are cooking, cut up, tear or shred your chicken


Here's the completed meal! Corn, Mashed potatoes and noodles with chicken!

Here's my littlest eating the noodles, he LOVED them!!

*Like I said at the top, you can use whole wheat noodles if you want.
You don't have to cook it in chicken broth, you can just use water if you want... I just cook my chicken, then take out the chicken and then cook the noodles in the broth. Super delish!
You may also need to add a little bit of water... sometimes I add about 1 teaspoon of water, just depends if I add more flour than I thought! I don't always measure... ;)

It's about Time....

(opps, I somehow hit the publish post before I was ready... Here's the completed one! Just goes to show how tired I am!!!! :) I think I am done now.... e-mail me or post comments if this doens't make any sense!!!! :))

Wow! So much has happened! Crazy busy, then one thing after another.....
SO, I am hoping I can get back on track and keep posting one everyday... ;)

I've got sooo many pictures for recipes that I really need to get posting... It just takes a bit of time... So be patient with me... ;)




These are really good for being made out of wheat flour! My kids LOVED them! Ok, so they aren't the healthiest, but like I said, atleast they are made out of wheat flour, right? ;)


Add the coconut oil

Then the Natural Peanut Butter


Now add the Organic Brown Sugar


Now add the powdered sugar


And now the vanilla, yummy!!!


Mix it up...


This is what it should look like...


Now take your flours and sodas and mix them together...

Add the flour mixture.... Mix it up... I added just a touch, well, about a tablespoon of water to this dough, it wasn't sticking enough....


The dough ready for the chips!


Add the chocolate chips and peanut butter chips and mix up...


All mixed up, cover and put in frig for about 30 minutes


Place on pan.... You could even put them a bit closer because they don't flatten and spread...


I used my Pampered Chef scoop to put the dough down...


So I had 7 cookies on the plate and put it close to my lil man, he grabbed that cookie so fast!! I couldn't even get it back for a pic! It was half way gone!! So, I didn't bother to put another one on there! :)


They still look like they need to cook, and they are supposed too! You want them soft in the middle, soooo good!!!!!!!


Peanut Butter Cookie Dough Balls


Makes 12-18 dough balls

•1/2 cup coconut oil
•3/4 cup natural peanut butter
•1/2 cup organic brown sugar
•3/4 cup organic powdered sugar
•1/2 teaspoon vanilla extract
•1 teaspoon baking powder
•1/2 teaspoon baking soda
•1 cup whole wheat flour
•1/2 cup unbleached organic flour
•1/2 cup natural peanut butter chips
•1/2 cup non-dairy chocolate chips

Using a stand mixer, beat coconut oil, peanut butter, sugars and vanilla until fully incorporated.
In a separate bowl, combine baking powder, baking soda, and flours.
Add dry mixture to the mixer bowl a little at a time.
Mix until a dough forms
Add your chips. There’s no need for exact measurements here. I won’t tell.
Combine and chill dough for 30 minutes, if you can wait that long...
But if you want the full Cookie Dough Ball experience though, preheat your oven to 350 degrees. Scoop dough with a mini ice cream scoop (or your fingers) and place balls on a cookie sheet.
Bake for 10-12 minutes. They’ll still be soft and look much like they did going in, but don’t over bake. Let the dough balls rest on the pan for a minute before transferring to a cooling rack.

*You can use dairy free margarine, like Earth Balance, but it has soy in it, so I stay away from soy products... If you are using soy, that's fine, but do some research on soy, esp for boys... anyways...
I added a bit of water to my mix, but you can add more peanut butter or rice milk/almond milk to make it stick together more.
I also didn't have organic powdered sugar, so I used regular. I did however have the organic brown sugar and used that.

Also didn't have natural pb chips...
I didn't measure my chips either, makes it more fun that way! :)
Also, if you are allergic to peanuts, you can use sunflower butter and omit the pb chips... That way you can still enjoy the goodness of this cookie! ;)
