Wow! So much has happened! Crazy busy, then one thing after another.....

I've got sooo many pictures for recipes that I really need to get posting... It just takes a bit of time... So be patient with me... ;)
These are really good for being made out of wheat flour! My kids LOVED them! Ok, so they aren't the healthiest, but like I said, atleast they are made out of wheat flour, right? ;)
Peanut Butter Cookie Dough Balls
Makes 12-18 dough balls
•1/2 cup coconut oil
•3/4 cup natural peanut butter
•1/2 cup organic brown sugar
•3/4 cup organic powdered sugar
•1/2 teaspoon vanilla extract
•1 teaspoon baking powder
•1/2 teaspoon baking soda
•1 cup whole wheat flour
•1/2 cup unbleached organic flour
•1/2 cup natural peanut butter chips
•1/2 cup non-dairy chocolate chips
Using a stand mixer, beat coconut oil, peanut butter, sugars and vanilla until fully incorporated.
In a separate bowl, combine baking powder, baking soda, and flours.
Add dry mixture to the mixer bowl a little at a time.
Mix until a dough forms
Add your chips. There’s no need for exact measurements here. I won’t tell.
Combine and chill dough for 30 minutes, if you can wait that long...
But if you want the full Cookie Dough Ball experience though, preheat your oven to 350 degrees. Scoop dough with a mini ice cream scoop (or your fingers) and place balls on a cookie sheet.
Bake for 10-12 minutes. They’ll still be soft and look much like they did going in, but don’t over bake. Let the dough balls rest on the pan for a minute before transferring to a cooling rack.
*You can use dairy free margarine, like Earth Balance, but it has soy in it, so I stay away from soy products... If you are using soy, that's fine, but do some research on soy, esp for boys... anyways...
I added a bit of water to my mix, but you can add more peanut butter or rice milk/almond milk to make it stick together more.
I also didn't have organic powdered sugar, so I used regular. I did however have the organic brown sugar and used that.

I didn't measure my chips either, makes it more fun that way! :)
Also, if you are allergic to peanuts, you can use sunflower butter and omit the pb chips... That way you can still enjoy the goodness of this cookie! ;)
