Chicken Rice Casserole

Just a warning, these pics may not look the best, but let me tell you, this is SUPER delish! I remember my mom always making this, YUMMY!!! It's got some curry powder in it and makes it soooo delish!!!

Chicken Rice Casserole

1/2 cup chopped onion
1/4 cup butter
Saute the onions in butter, but do not brown
1 cup finely chopped celery
2 cups cooked cut up chicken
1 cup uncooked long grain rice
1 1/2 tsp salt
1/4 tsp pepper
1 tsp curry powder
2 cans cream of chicken soup
2 cans chicken broth

Mix all this together. Cover. Bake 2 hours at 350d oven. Stir after first hour.



*I used leftover turkey this time. :o) Also, I don't always add the celery. I don't always have celery, and so if I don't add celery, I use one can cream of celery soup and one can cream of chicken. I also add a little bit more than 1 teaspoon curry powder.
You can also make double and put the other half in the freezer. IF you do freeze this, when you go to re-heat it, you will need one can cream of chicken soup with water or chicken broth to make it moist again.
I also mix this all together in the pan that I cook in it, it's a one dish meal! Less to clean up! Just mix the soups and broth or water together first, then add all the other ingredients in.
Make sure you cover this! It also may not take the full 2 hours. It usually takes about an hour and 15 to 30 minutes for me.

Hot Tuna Sandwiches

Here's a very yummy sandwich recipe! Now, I am not one to eat a ton of fish, let alone ANY fish!!! But I am lovin' this one! ;o) The kids really like it too! Plus fixed on some homemade whole wheat bread, YUMMY!!! It is supposed to be put on hamburger buns, but you can use other breads as well.
This is actually my Aunt Lois' recipe. :o)

Cover the whole pan with foil



The finished product! A nice warm tuna sandwich!





Hot Tuna Sandwiches

1 can tuna fish in water
3 hard boiled eggs (cut up)
2 TBSP sweet pickles
2 TBSP chopped onion
2 TBSP chopped olives
2 TBSP chopped green peppers
1/2 cup mayo
1 cup Velveeta cheese, chopped

Mix and put in hamburger buns.
Wrap them in foil and put in oven.
Bake at 250 degrees for 30 minutes


*I just use whatever kind of pickles I have in my frig, even if it is the thin sliced ones that you use for hamburgers or sandwiches. The zesty ones are really good in this! I only use 2 hard boiled eggs for this recipe. I also use shredded cheddar cheese, I don't usually have Velveeta on hand. I also use about 1/4 cup mayo instead of the 1/2 cup. This made5 sandwiches. I think when I used the hamburger buns I can get about 6 or 7.

Wheat/White Bread

Don't ya just LOVE the smell of homemade bread? Especially in the fall! I don't know what it is, but I LOVE the smell of ANYTHING baking in my oven in the fall!

I have a couple different recipes for bread, no, not the kind you put in your bread maker!!! But tried this one first! It is actually a white bread recipe, but didn't have enough white, so I did half white and half wheat. It turned out really yummy!

The next time I made it, I did all white and it was SUPER good too! So very good toasted with homemade apple butter on it! YUMMY!!!

I was going to try another one this afternoon, but my kids woke up to soon. Which means, the bread won't rise when they are awake! ;o) So after I put them to bed, will mix some up!





This is the wheat and white combo.





This is the all white flour one! Both really good!


Homemade Bread

1 (1/4 oz) package active dry yeast
1/2 cup plus 2 cups warm water or milk
1 heaping tablespoon lard or shortening
2 tablespoons sugar
1 tablespoon salt
7-8 cups flour

In a small bowl, dissolve the yeast in the 1/2 cup warm water. In large mixing bowl, combine the lard, sugar, salt and remaining 2 cups water. Into the mixing bowl stir the yeast and enough flour to make a soft, elastic dough that doesn't stick to the sides of the bowl. Cover the dough with a loose piece of plastic wrap and let rise til double in size, (about 1 1/4 hours) in a draft free warm place. Punch the dough down, and divide it into 2 balls. Form into 2 loaves and place in greased loaf pan. Cover with a damp cloth and let it rise again until double (about 45-60 minutes). Bake in a 325d oven for about 45 minutes. The bread will sound hollow when it's done.


*I used water instead of the milk. Also, you can brush the top of the bread with melted butter or margarine to have a softer crust. This bread doesn't last very long in our house! ENJOY!!!!

Chunky Tomato and Vegetable Sauce


Frying up the veggies, oh the smell was sooooo delish! Again, wish it was a scratch and sniff picture!!!! ;o)


The recipe calls for fresh or canned tomatoes, and I cheated and used canned! ;o)



Look at those chucks of veggies, YUMMY!!!!!


Pour over your cooked pasta and ENJOY!!!


Chunky Tomato and Vegetable Sauce

2 tablespoons olive oil
2 cups fresh chopped onion
2 cups chopped carrot
2-4 cloves of garlic, minced or pressed
1 cup diced zucchini
3-4 cups sliced mushrooms
1 teaspoon basil
1/2 teaspoon thyme
1/2 teaspoon marjoram
1/2 teaspoon salt
pepper to taste
1 28 oz can peeled, chopped tomatoes, or 4 cups fresh peeled, chopped tomato
1 teaspoon sugar
2 tablespoons tomato paste

Heat oil in medium saucepan over medium heat. Add veggies, herbs and salt and pepper. Stir to coat with oil. Cover the pan and steam the veggies for about 20 minutes, stirring frequently to keep them from sticking too much. Add the tomatoes and sugar and paste, and simmer for about 30 minutes.


*I used coconut oil instead of olive oil. I didn't have any zucchini, so I used some green pepper. Next time I will add the zucchini with the pepper as well. You could add other colors of peppers too, like yellow, orange, red... You could prob add some jalapeno pepper too for extra spice. I also used one 14oz can of diced tomatoes. Also used a whole can of tomato paste. You can use whatever type of pasta you want, even wheat pasta. ENJOY!!!
