Just a warning, these pics may not look the best, but let me tell you, this is SUPER delish! I remember my mom always making this, YUMMY!!! It's got some curry powder in it and makes it soooo delish!!!

Chicken Rice Casserole
1/2 cup chopped onion
1/4 cup butter
Saute the onions in butter, but do not brown
1 cup finely chopped celery
2 cups cooked cut up chicken
1 cup uncooked long grain rice
1 1/2 tsp salt
1/4 tsp pepper
1 tsp curry powder
2 cans cream of chicken soup
2 cans chicken broth
Mix all this together. Cover. Bake 2 hours at 350d oven. Stir after first hour.
*I used leftover turkey this time. :o) Also, I don't always add the celery. I don't always have celery, and so if I don't add celery, I use one can cream of celery soup and one can cream of chicken. I also add a little bit more than 1 teaspoon curry powder.
You can also make double and put the other half in the freezer. IF you do freeze this, when you go to re-heat it, you will need one can cream of chicken soup with water or chicken broth to make it moist again.
I also mix this all together in the pan that I cook in it, it's a one dish meal! Less to clean up! Just mix the soups and broth or water together first, then add all the other ingredients in.
Make sure you cover this! It also may not take the full 2 hours. It usually takes about an hour and 15 to 30 minutes for me.
