Grilling!!!




So today I remembered I had some meat in my frig that either needed to be frozen or fixed! So since it was SUPER nice out today, I decided to marinate in some Italian dressing for a few hours and then put it on the grill. I went to the store after the kiddos woke up to grab a few veggies. I am COMPLETELY out of EVERYTHING, so I HAD to have SOMETHING that went with the mini steaks. I know if my cuz is reading this, he would be like, that's not a steak, that's a BITE of a steak! HAHAHA!!!!!!! :)


I grabbed some asparagus, broccoli, cauliflower and carrots at the store. I would've put in some peppers, but the kiddos aren't big on peppers, so I opted to leave them out. Well, this time anyways.. ;)


I grabbed 2 big pieces of foil, and made it into a x shape. Put the cut up veggies on the foil, sprinkled just a bit of garlic salt over the top and then folded up the top part of the foil, then put a little bit of water in the bottom just so it wouldn't stick. Then folded up the ends and put it on the grill. I put it on high heat just because I wanted to make sure the veggies were nice and soft for my littlest to be able to eat. And eat did he! That boy loves his veggies, and meat! :)


I had it on the grill for about 20 minutes before I put the meat on. I put the meat on for about 10 minutes. It didn't take very long for my small pieces, well, um, BITES of steak to cook! :)


It was a very good "summer" meal! Can't wait to grill out more! Gonna play around with some spices to "rub" my meat down and sit for a few hours before grilling!!! :)


This is a SUPER easy meal, and you can add or opt out for different veggies! Or do a complete veggie meal and not add the steaks.


I don't have a "real" recipe for this, but this is what I did:


Whatever kind of steaks you want. You can also use chicken, any kind you want too!

A bottle of Italian dressing

Take the steaks or chicken and put it in a baggie. Dump some Italian dressing all over the top til it's pretty much covered.

Place the baggie in a bowl and put in frig until ready to use.

Heat up grill, and place steaks or chicken on until ready!

ENJOY!!!!!








For the veggies:

2 pieces of foil, place on counter into a x shape

1 stalk of broccoli

A bunch of cauliflower

A bunch of baby carrots

1 bunch of asparagus

Garlic salt

Water

Chop up into bite size pieces and place all veggies on foil. Put on as much as you want, or as little. Sprinkle with a bit of garlic salt and add just enough water so it won't stick to the bottom or burn as you grill it. You can either put this on for a long time so your veggie will be soft, or as little so it will still be crunchy. I put mine on high heat for right about 30 minutes total. It was nice and soft, but like I said, that's how I wanted it! Once my little guy gets more teeth, I won't put it on as long.

Popover Doughnuts

Since tomorrow is Saturday, another week went by and this is the first that I am posting! Opps.... I am gonna stop apologizing! :) But I will mention that my house IS getting cleaner and I'm getting FATTER by trying all kinda of new things! ;)




Doughnuts, LOVE them! I really, and I mean REALLY like these! These little doughnuts are SUPER easy to make! Even fun! :) I like to make them on a Saturday morning. I don't make them often though! :) The nice thing about this batter, you can make half a batch Saturday morning, and if you are brave enough, make the other half before church! I made these once when I helped make food for the breakfast bar at our church. So good and such a hit! :)

Put some vegetable oil in a pan and put burner on medium/high heat. While that is getting warm, combine your ingredients for the doughnuts.


Place 2 eggs in a bowl


Beat them


Add milk, if you have buttermilk, you can use that, but I usually use regular 2%


Add some vanilla


Mix those ingredients all together!

Add the flour


Add the heaping tablespoon of baking powder


Stir it all together...


Make sure it's mixed thoroughly


Drop a round tablespoon of batter into your hot oil. I like to test it first by dropping a little tiny amount, if it's ready, it will pop up to the top pretty quick!


These are sooo fun to make because they turn themselves! Well, as long as they are round enough they turn themselves! Sometimes you have to help turn it! But still so fun to make! While these doughnuts are frying, take a few seconds to combine your cinnamon and sugar to roll the doughnuts in!


Take some sugar and cinnamon and mix it together




Nice and golden brown!


Ready to be dumped in cinnamon and sugar! I don't have a pic, but make sure after you've taken the doughnut out of the oil, place it on a paper toweled covered plate. That way if there is any excess oil, it can drip off and gives it a few seconds to cool off as well!


Roll it around in that cinnamon and sugar goodness! Be careful, they may be a tad hot yet!



The finished product! You may want to make the whole batch, they go SUPER fast!!! :)

These are the little extras that you may need to take out after a few minutes of frying your doughnuts!


Popover Doughnuts

2 eggs, beaten
1 cup sugar
1 cup milk (remember, if you have buttermilk, you can use that too, either one works the same!)
1/4 teaspoon salt
2 tablespoons butter or margarine, melted
1 1/2 teaspoons vanilla
3 cups flour
1 tablespoon baking powder
Combine all ingredients in order given. Drop batter by tablespoonfuls into hot oil. When browned, remove from oil and roll in cinnamon and sugar mixture.





*You can fry up the amount you need, and save the rest for later.
You can also use powdered sugar.
You can also add chocolate baking powder to the mix and make chocolate doughnuts! Those are SUPER good!!!! Just roll those in regular sugar or powdered sugar! YUM!!!

I Know, I Know...

I know I've said this before, but I REALLY do have good intentions of getting a recipe up here everyday! I've been so busy this week with cleaning and moving furniture, that I haven't taken the time to blog my recipes! I REALLY do have some and I know I need to get them in here! But between cleaning, school work, playing, picking up, laundry, I just don't have the time right now! I will TRY my BEST to get some up here this week!!! :)

Cheesy Potato Soup



Yummy! Love a good filling soup on a cold day!! And after all the snow we got, I was in need of some good warm soup!!!




Take red potato and...



...cut in half



Then cut that half in half...






Then slice it into slices, I turned it so I ended up slicing it again, so it was like french fries...



Then slice into bite size pieces, so it's like the hash browns you get from the section at the store!




Perfect! :)


Slice one stick of celery


Then slice up one small red onion


Cut up some baby carrots, I think I had about 6 - 8



Bring the veggies to a boil


After it's boiled for about 10-15 minutes, take your flour and add it to your milk, stir it up...







Then add it to your veggies


Stir it up and add...



your shredded cheeses


...and add some spices... Bring it to a boil and reduce heat, simmer for 15-30 minutes...


And VIOLA!!!! Ready to eat, you can add...



...bacon and cut up green onions if you like! Makes it extra tasty!!! :)





Cheesy Potato Soup

6 medium red potatoes
1 stick of celery
1 small red onion
6-8 baby carrots
Celery Salt, Salt, Pepper, and Garlic Salt
3-4 cups milk
3-4 tablespoons flour
1 cup shredded Monterrey jack cheese
2 cups shredded cheddar cheese
4 slices of cooked crumbled bacon
1 bunch of green onions, chopped

Cut up the red potatoes, celery, onion and carrots. Place it in a pot with just enough water to barely cover the top of the veggies. Bring to a boil and cook for 10-15 minutes.
Take the milk and flour and mix together until no longer lumpy. Turn heat off the veggies and then add the flour/milk mixture. Then add the cheeses, the celery salt, salt, pepper, and garlic salt. I just dump these in, so you may want to start off with a little of each, then taste, and then add more if you need. Mix it together, turn the heat back on until it boils, turn down the heat to a simmer and simmer for 15-30 minutes, or until your veggies are nice and tender.
While it's finishing cooking, fry up the bacon, and cut up the green onions.
After you've spooned into bowls, add the green onions and bacon, and then ENJOY!!!

*You don't have to use the cheeses I mentioned, you can use whatever kinds you like. Or use just one!
You could also use frozen hash browns if you want the easy way
Like I said, I don't measure the spices, I just dump. So if you aren't comfortable with just dumping, start off with a teaspoon of celery salt and garlic salt. Just a sprinkle of salt and pepper. Taste it and see if you need more celery salt and garlic salt. I usually add more celery salt than garlic salt!
It is really good with the bacon and green onions! I don't always have the green onions, but I always try to have the bacon with it!
